blood orange and pistachio chia pudding

INGREDIENTS 


  • 2 Tbsp chia seeds

  • 1/4 cup Greek yogurt or skyr, plain, whole milk

  • 2 scoops collagen peptides

  • 1/2 cup almond milk, unsweetened, vanilla

  • 1/2 Tbsp honey

  • 1 large or 2 small blood oranges, peeled and sliced

  • 1 Tbsp pistachios, roughly chopped

INSTRUCTIONS 


Combine yogurt, almond milk, and honey in a small Tupperware or glass jar; whisk in chia seeds and collagen peptides; refrigerate overnight, or for at least 3 hours.

Just before eating, give chia pudding a stir and top with blood orange and pistachios.

Notes


Toppings can be added prior to refrigeration for a grab-and-go meal.
